When you're deciding what kind of project car to build, you need to decide a few things first. Most importantly is your budget. How much are you going to spend on this car? Then decide what you want the car to be? Is it gong to be a show car? Is it going to be a daily driver? Is it going to be a full on racer?
The cheapest option will be the daily driver. We all want to gorgeous car to drive everyday. But since this will see all the horror the roads have to offer, we may not spend a few thousand or more on a paint job. Now will we install all the go fast parts of a race car.
If you want to race it, what class? What style of racing, roadracing or dragstrip? In this case you're money is going to into go fast parts and suspension upgrades. The budget is noe getting larger as some of the parts aren't cheap.
Will it be a show car? Then you need an all out restoration. Spare no expense on the interior, audio/video setup, the engine compartment and the bodywork. The bodywork and paint could be the biggest part of the budget on a show car.
Do you want all or part of all three choices? The could be the most expensive project of all.
This answer is somewhat vague. Give us more of an idea of what you want from the project. There are plenty of the board that can help you through the decision-making process.
Good luck! Greg
